Jamaican Christmas Cake a.k.a. Black Cake

It's that time of year for all things Holiday, and I'm excited to share my favorite Holiday treat, Black Cake. This rich and moist Black Cake is the centerpiece dessert that’s perfect for any holiday or celebration.
Black Cake is also known as rum cake (it's made with lots of wine and sometimes actual rum) and it's served and shared every Christmas season.
Black cake is made by soaking dried fruits in wine/rum in advance. I think you can get away with soaking the mixture for 5 days, some people soak their fruits in wine for months. You then take this mixture, combine it with the remaining ingredients, and bake in the oven at a low temperature to get that rich, moist, delicious cake.
I've also heard there's an awesome book and TV series named "Black Cake." It's on my list of things to read and watch. I'm thrilled that this Caribbean staple is getting shown to the masses.
